stuffed acorn squash

This recipe is so easy and filling and delicious! It's one of our favorite dinners, for sure.

1 acorn squash
1 pound ground turkey, ground beef, or a mixture of both!
1/2 onion, chopped
1 can black beans, rinsed and drained
1 can Ro-tel, drained
1/2 can diced tomatoes, drained
salt
pepper
cumin
chili powder
shredded cheese (we used the Mexican blend or extra sharp cheddar)

Slice an acorn squash in half, stem to end. Scoop out the seeds and salt it a bit. Place the squash cut sides down in an olive-oil greased baking dish and bake at 375 degrees for 45 minutes. In the meantime, brown the ground turkey/beef with the onion. Add black beans, Ro-tel, tomatoes, cumin, chili powder, salt, and pepper. When the squash is ready and tender, flip it over and mound the meat mixture in the hole and on the top of the squash. Sprinkle (or in our case, mound) the cheese on top. Place it back in the oven for 8ish minutes. When the cheese has melted, it's time to take it out and let it cool a bit.

This recipe makes enough meat to fill two whole acorn squashes (aka four servings), even though we only used one squash. So...either use two acorn squashes, divide the filling ingredients in half, or save the leftover meat mixture for tacos the next day (like we do!).
